It’s been almost a year since Swanky’s Taco Shop announced they would be opening a new location in East Memphis. Various setbacks and snags pushed the opening date back so far that taco lovers were beginning to lose hope. When I saw that the temporary Swanky’s sign had come down yesterday, I feared the worst.
Call it an Easter miracle: while the flimsy tarp banner has come down, the Swanky’s logo will rise again.
A permanent sign goes up by the end of the week, and, after a very long year, the favorite taco shop of Carrefour will have a sister location in the shopping center at the intersection of Colonial and Poplar.
“Barring any unforeseen issues, we will have a soft opening on Monday, April 12,” says owner Matt Wilson. “Then we hope to have a grand opening celebration in the beginning of May, maybe on Cinco de Mayo.”
They also plan to host a few events, possibly charity-related, toward the end of April or early May to get the ball rolling.
A new location isn’t all Swanky’s plans on introducing. “We’ll have some new dinner options as well,” says Wilson. “Red snapper, sirloin steak, a ceviche appetizer. The plan is to have a full-service feature at nighttime.”
Wilson is also looking for qualified servers, willing to learn the ins and outs of Swanky’s highly successful taco bar empire. For more information, visit swankystacoshop.com.
