      <![CDATA[Correction:  When referring to my grade school p.c. sandwich, I meant to use the word "processed" (as in:  a ready-made spread) not "prepackaged" (which I just realized makes it sound like one of those sealed 7-11 refrigerated sandwiches). Truth matters.<br>
<br>
Anyway, here's a thought -- if I were ever to conquer my pimiento cheese problem, I imagine it might be fun (assuming I could also gain the courage that party-throwing requires) to have an international pimiento cheese potluck, with various sandwiches spiced up with the herbs of different countries (curry?

      <![CDATA[As a transplanted northerner (oh, alright--Yankee), I can honestly say pimento cheese was one of the things that made the move worthwhile (one of the others was discovering that restaurants--or at least some of them--served buttermilk, not something you could get in most northern restaurants). <br>
<br>
I'm not sure there is such a thing as bad pimento cheese, and gourmet pimento cheese is definitely an example of gilding the lily.
