As a resident of the area, I think this sounds fantastic. There are many food trucks in Memphis serving excellent food, and I think the design sounds creative and interesting. To have a vibrant city, folks, you have to embrace change and not expect every restaurant to look like an Applebees.

Great post, Eric. This is one of the things I'm really trying to emphasize in our entrepreneurial journalism program, where we often don't have the development skills - unfortunately - but where we CAN put a lot of effort in on developing the idea and doing the customer discovery, all of which tap the storytelling, marketing and public relations skills our students have or are learning. I also often recommend resources from Lisa Williams, a journalism entrepreneur who decided if she wanted to get it done she would have to learn to code herself…

As a professor at the University of Memphis, I regularly hear stories about how our gay students and faculty experience a variety of challenges that range from discrimination to simple cruelty and everything in between. I think it is incredibly naive to think that there is no need to clarify and emphatically state that discrimination is unacceptable in Memphis.
