Well said, OT; however, those in the University of Memphis community most affected by Rudd's ready-made "answers" have discovered that he cannot - or will not - provide honest responses to certain questions.
Jeff, I have been pre-soaking bratwurst and even regular frankfurters for years, and they both plump up, Non-Permeable Membrane attributes notwithstanding. However, after reading this fascinating reportage (which, I agree, is undoubtedly one of the finest pieces of in-depth journalism I have ever read anywhere, FR) and also the admirably conscientious reader responses, I will try beeswax' idea: pre- AND post-soak. Ein Prosit!
RP Tracks: Home of the BBQ Tofu Nachos... and, boy, they're GOOD!!!!
Lately I have been finding small tubs of just the chicken meat, already cleaned of skin and bone (although some bone may have been missed) for $3-4 a tub. I suppose that these are from the roasted chickens, but are excellent for chicken salads or chicken tacos, with enough to feed 3-4 people (about 1-1.5 lb. of meat). Such a deal!
